One of the things, I’ve been trying to cut down in my diet is carbs. So to replace that, I’ve been making more soups and today on my blog, I’m sharing a simple blender recipe for a creamy and healthy pumpkin soup that you can make in just 30 minutes.
Did you know that pumpkin contains 9 important nutrients? They are Vitamin C, Vitamin E, magnesium, potassium, zinc, iron, alpha and beta carotenoids, which help prevent cellular damage as well as lutein for eye health. Source here.
Serves: 3-4. Preparation time: 5 minutes. Cooking time: 30 minutes.
Ingredients for Pumpkin Soup:
- 400g Pumpkin cubes with skin removed
- 1 Medium Yellow Onion, chopped
- 20g Unsalted Butter
- 400ml Chicken Broth
- 60ml Cooking cream for serving
- Pepper
Steps:
1. Melt butter in a pot over medium heat. Add chopped onion and sauté for about 5 minutes until caramelised.
2. Whisk in chicken broth slowly and bring it to boil. Next, add in pumpkin cubes and continue to boil.
3. When the mixture starts to boils, reduce heat and simmer for another 10 – 15 minutes, stirring in between until pumpkin softens.
4. Remove pot from heat and set aside to cool slightly.
5. Slowly pour cooled soup into blender and blend until desired consistency. I used my Philips Jamie Oliver Blender and set it on speed 1 and all it took was 10 seconds to achieve a smooth consistency. Add pepper if desired. Dish soup into a bowl.
6. Heat cooking cream and spoon it over the soup.
Alexis has never been a fan of pumpkin, but I’m proud to say that I’ve converted him with my homemade pumpkin soup. The extra score was when he commented that my soup looked so gourmet that he couldn’t believe it was prepared from our very own kitchen.
